Lightly grease the cookie sheet with coconut oil, butter or cooking spray.
Combine all ingredients in a bowl and mix together.
In your hand, shape small pieces of batter into cookie size balls or patties. This recipe is a little crumbly when cooked, so if you would like to reduce crumbs, shape into bite-sized cookies that you don't need to break.
Bake at 350 for about 15 minutes.
With no preservatives, these cookies should be refrigerated or frozen. Keep in fridge for up to 4-5 days, or just freeze the batch and take out a few at a time as needed.
